Havana Sidecar allesammans!

Har ni druckit drinken Sidecar? Det är en fantastisk cocktail med cognac, apelsinlikör och citron.

Havana Sidecar är Rom istället för Cognac och det är schysst för barskåpet när det är slut på bra cognac. En annan kul grej är när jag berättar om de olika skolorna:

“There are two different types of schools when it comes to the sidecar, the “French School” and the “English School”. The French School has equal parts Cognac, Cointreau, and lemon juice. While the English school has 2 parts Cognac and 1 part Cointreau and lemon juice. As you see below, I prefer the French School.”

Att dubbelskaka är sjukt viktigt

Lite konstig rubrik, men den stämmer till hundra procent.

Förresten, detta blir ännu ett cocktail-inlägg.

 

Som rubriken säger så är det viktigt att dubbelskaka, vad är det jag egentligen menar? Jo det är när man gör drinkar med äggvita i, det är viktigt att skaka alla ingredienser (utom is) en stund för att skapa lite skum och att allt blandas ut innan du tillsätter is (som gör drinken lite mer vattnig, vilket påverkar skumkronan). Så det blir en liten demonstrativ variant idag. Bilden till inlägget är en vacker Clover Club med dubbelskakning. Mitt Instagram-inlägg nedan är en drink som skulle dubbelskakas, men skallen var inte på rätt plats… hehe.

"What's the importance with that double shake?"⠀ ⠀ I get that DM from time to time and let's say that I wanted to demonstrate what happens when you don't dry shake the egg white before you mix it with ice (I actually forgot…)⠀ ⠀ So when you don't dry shake the egg white you will not get that rich foam, that's because of the water in the ice that will dilute the whole mixture and sabotage the beauty to be, like in this picture. As you can see, it destroys the beauty of the drink, but it also destroys the nice foamy texture under the rich foam up top. It actually lowers the quality of the drink.⠀ ⠀ So to be clear, this picture of the drink isn't double shaked. Oh right! This is a White Lady by the way hehe…⠀ ⠀ 4cl Gin⠀ 2.5cl Cointreau⠀ 2cl lemon juice⠀ 1cl simple syrup⠀ 1 egg white⠀ ⠀ I also add some drops of orange bitters⠀ ⠀ Double shake it (without ice first to give the egg white a better texture, then with ice). Double strain it in a wide champagne glass. Älskar att skapa cocktails

Varje gång jag undersöker ett nytt territorium inom mat och dryckeskultur så gillar jag att skapa saker på helt egen hand. Först lär jag mig grunderna och klassikerna, men sedan finns det först ett sug för att skapa men även för något som inte finns ännu.

Idag tänkte jag skriva om cocktailen jag publicerade på min Instagram i lördags. Det är en cocktail som påminner en Daiquiri, men för att vara mer korrekt en Rum Sour… Sour betyder att punschen i sig innehåller citron som syra.

Däremot så blir det ju inte en Rum Sour då jag både har Aperol och hemmagjord Cascarasirap som absolut inte tillhör en sån cocktail. Cascara är skalet på kaffebäret som går att använda som te, det smaker som nypon och torkad tranbär skulle jag säga. För att avsluta cocktailen så strör jag över lite torkad blåklint och helt ärligt ser den helt magisk ut. Jag har inte kommit på ett namn på den än, men det är en Kaffenytt Orginal så att säga! Sometimes when I'm feeling for a cocktail, I search for something that doesn't exist… Yet! Does that ever happen to you?⠀ ⠀ As you all know I love coffee, and I love cocktails as well… And combining them is something I like. There's something called Cascara, and I've wanted to incorporate it with cocktails for a while now, so I did my own drink with Cascara and it worked well. If you want to know what Cascara is, I'll write more about it under the recipe.⠀ ⠀ The cocktail is a sweet and sour drink. It has flavors of rosehip, clear citrus notes, and is a beauty to adore.⠀ ⠀ Kaffenytt Summer Drink (please comment a better name)⠀ ⠀ 3cl Aperol⠀ 2cl White Rum⠀ 3cl Lemon⠀ 2cl Cascara Syrup⠀ 1 egg white⠀ ⠀ Double shake it (without ice first to give the egg white a better texture, then with ice). Double strain it in a coupe glass, then garnish it with cornflower.⠀ ⠀ The Cascara syrup will give you a lovely sweet rosehip flavor that pairs well with lemon and the lovely blend that is Aperol. It's super tasty and is perfect for the summer.⠀ ⠀ However, what is Cascara? I wrote that I loved coffee and to pair them together, but what does Cascara has to do with it? Well, if you didn't know, coffee is the seed/core of a coffee cherry. Cascara means "peel" or "husk" in Spanish and is the husk of the coffee cherry. After they've been dried in the sun they can be used as a tea, you just brew them normally. For my syrup I brew it like this:⠀ ⠀ 12g Cascara⠀ 100g water⠀ 100g sugar⠀ ⠀ Get the water to 95 degrees Celsius then let it steep for 18 minutes. Cocktail: Gold Rush

En utav mina favoritdrinkar tillhör “släktet” sour. Tänk er en cocktail som innehåller Sprit, sockerlag och viktigast citron. Denna är lite roligare då den innehåller honungsvatten istället för sockerlag. Och i detta fall är spriten Amerikansk Bourbon Whiskey. COCKTAIL TIME!⠀ ⠀ I'm a huge fan of Whiskey Sour and the cocktail Penicillin, so a reasonable choice is to choose something between the two and that's a Gold Rush! While I was reading @mathinlundgren's book Barmästarens Manual (Bartender's Journal) I got a greater knowledge of the foundations of drinks presented as a "cocktail tree". Which is good if you've only just begun to mix cocktails. It's also the same book I found this recipe of the Gold Rush.⠀ ⠀ Gold Rush Recipe:⠀ ⠀ 5cl Bourbon Whiskey⠀ 3cl Lemon juice⠀ 2cl honey syrup*⠀ ⠀ Shaken with ice and double strain it into an old fashioned glass. ⠀ ⠀ In his picture, he uses only a big chunk of ice (see the second picture). However, I want it to give a greater shine since it's called "Gold Rush". I used my ice pick to smaller cubes of clear ice so the golden liquid could reveal itself even more! Which it actually did in my opinion. I also used a dash of salt solution in the drink to enhance its sweetness. ⠀ ⠀ I use a classic glass called Hobstar DOF from Libbey, I got mine from @barkonsultnordic.⠀⠀ ⠀ *Honey Syrup 1 part water 4 parts liquid honey. At the end of last month, I entered a competition to make the best Gimlet I can. So I did my own twist on a traditional/modern Gin Gimlet, but today I want to share my absolute favorite. This is actually after getting overly confident (since yours truly actually won, hurray for the coffee guy!). ⠀ ⠀ So I thought to my self, let's elevate this, let's make it weird even. Since I like to do my own sauces, oils, and yeah, the list is very long. Every time I "create" something I love to put hibiscus in it. First, it gives the best tartness I've ever known and it gives you a great red color. It pairs so well with lime and obviously the sugar in the syrup balances it out. The thing was, it worked so well.⠀ ⠀ Recipe for my Hibiscus Gimlet:⠀ 5 cl Dry Gin⠀ 3 cl freshly pressed lime juice⠀⠀ 2 cl homemade hibiscus syrup*⠀⠀ ⠀ Shaken with ice and garnished a lemon wheel with a lightly moistened hibiscus leaf in the middle pierced with a cocktail pin.⠀⠀ ⠀ This is my favorite Gimlet.⠀ ⠀ *The homemade hibiscus syrup: It's basically simple syrup, but you brew it all together. So 50% water, 50% sugar, and hibiscus to match your acidic favorite. I had around 100g water 100g sugar and 5 large bits of hibiscus.⠀ ⠀ Background about the competition, it was made by @davidkringlund and @mathinlundgren. Since I won, I will receive Mathins bartender manual and I'll probably try a lot of his recipes out. So you'll be seeing much more from both of them in the future, and that's on Saturdays when I post cocktails!⠀ ⠀ The Gin is actually called Monokel Dry Gin and has a "real" monocle on it, it's the one behind the cocktail in the picture. Cocktail – Penicillin

Ibland så kan varje inlägg handla om kaffe, men jag har också ett intresse för cocktails, mat och annat gott man kan njuta utav.

Detta inlägget handlar om en cocktail vid namn Penicillin.

Till skillnad från alla andra cocktails så är detta en modern klassiker, de flesta kommer ju från många år tillbaka. En Old Fashioned kommer ju till exemepel från sent 1800-tal.

Jag följer en youtubers recept (David Kringlund), hans recept på en Penicillin är:

5 cl Skotsk whisky
3 cl Citronjuice
2 cl Honungslag
0,5 cl Ingefärsjuice
Skakas kall och silar upp på en stor isbit i ett lågt glas. Rökig Islay-whisky droppas på toppen innan drinken garneras med en bit ingefära.

 

En Penicillin påminner om en whisky sour, bara att den har lite mer hetta från ingefäran och den rökiga whiskyn på toppen!

It wasn't long ago I wrote in my bio that some it might appear some spirits on my Instagram page, so the first non-coffee related post will be a cocktail called Penicillin.⠀ ⠀ The recipe I used is from @davidkringlund that you should look up, he also has a youtube channel. Every recipe of his I've followed has been perfect to my taste and it tastes a lot better than most bars I've been to. ⠀ ⠀ In this recipe, I couldn't follow the recipe to the end… It's because I used all my ginger yesterday making a ginger syrup so I garnished with the remains of my grated sugary ginger pinched into an oval ball on my cocktail pin. Instead of a much more beautiful and more fragrant fresh ginger slice… So bear in mind that he uses fresh ginger and not a weird looking ginger egg.⠀ ⠀ His recipe is:⠀ 5 cl Scotch Whiskey⠀ 3 cl lemon juice⠀ 2 cl honey syrup⠀ 0,5 cl ginger juice⠀ ⠀ Shaken with ice. One or more bar spoons of smokey Islay Whiskey on top and garnished with a ginger slice.⠀ ⠀ However, that piece of weird ginger was actually really good to gnaw on!
